Smothered Pork Chops

The best pork chop you will eat! In my husbands opinion.

Ingredients:

4 salted and peppered thick cut pork chops (2 inches thick)

1 Tbsp. olive oil

2 Tbsp. butter, divided

7 oz. minced mushrooms

3 cloves minced garlic

1/4 tsp. Italian seasoning

1 Tbsp. flour

1 c. chicken brother

1/2 - 1 tsp. lemon juice

3/4 c. heavy cream

2 cups packed fresh spinach


Directions:

  1. Heat a cast iron skillet to medium high heat, add olive oil and 1 Tbsp. butter to melt. Season generously the pork chops with salt and pepper, and sear 4 minutes each side in the cast iron. If you chops are 3/4-1 inch thick, reduce time to 2 minutes each side. Overcooking will make them tough.

  2. Remove chops from skillet, set aside. Turn heat down to medium. Add remaining butter, garlic, mushrooms and seasoning to the skillet and cook 5 minutes. Add flour and cook 1 minute more to thicken.

  3. Add broth and lemon juice, let thicken a few minutes. Add cream and mix. Add fresh spinach to wilt.

  4. Return chops to the pan and let cook until internal temperature reaches 145F. Remove and serve over rice or mashed potatoes!
