Baked Blueberry Donuts

Dreamy Blueberry Donuts for breakfast! Who doesn't like a good donut? These baked donuts have a pop of bright citrus in the glaze to make them extra memorable.


Ingredients

Donuts-

1 cup flour

1/2 cup packed brown sugar

1/2 tsp. salt

1 tsp. baking powder

1/2 cup sour cream

2 1/2 Tbsp. unsalted butter, melted and cooled

1 large egg

1 cup fresh blueberries


Glaze-

1 cup powdered sugar

1/2 tsp. vanilla extract

1-2 Tbsp. milk

zest of 1 clementine


Directions

  1. Preheat oven to 350F. Spray donut mold with cooking spray and set aside.

  2. In a mixing bowl whisk together the dry ingredients.

  3. In a stand mixer mix the wet ingredients - butter, sour cream, egg until light and fluffy. Fold into the dry ingredients.

  4. Fold in blueberries and spoon the batter into the prepared bake pan.

  5. Bake for 20-25 minutes until the donut bounces back when gently pressed.

  6. Let sit 10 minutes until cooled, mix the glaze. Dip donuts into glaze and set.
