BBQ Meatballs

Ugh. These things are so good, and are great for field meals in case any farmers wives are looking for something that can be eaten easily. Another favorite of friends and family! Bonus: they are gluten free!

Ingredients

3 lbs. ground beef

2 eggs

1 can evaporated milk or regular milk equivalent

2 cups instant oats

1 tsp. salt

1/2 tsp. pepper

1 tsp. onion powder

1 tsp. garlic salt


BBQ Sauce:

2 cups ketchup

2 cups brown sugar

3 Tbsp. liquid smoke

1 tsp. garlic salt

1/2 tsp onion powder


Directions

1. Preheat oven to 350 F. Mix all meatball ingredients with your hands in a large bowl. Form meatballs and place in a 9x13 bake dish. (Can cut in half and bake in a 8x8, and the rest in a freezable container to eat for later).

2. Bake uncovered for 1 hour. While they are baking mix the sauce. Place all ingredients in a mixing bowl and whisk well until smooth. When meatballs are done, take out of the oven and pour sauce over them. Return to the oven to bake 10-15 min. more.

The family really like the meatballs, they were a big hit. We made Mac and cheese with them, but just Kraft because we were super busy, didn’t have time for the real thing. We’ll be trying your Mac and cheese recipe really soon though!
