Directions:
1. Preheat oven to 425F. Cut a medium sized cauliflower into bite size pieces, and toss in a bowl with 2 Tbsp. Olive oil, 2 Tbsp. melted butter, 1/2 tsp. salt, 1/2 tsp. garlic powder, 1/4 tsp. black pepper, 1/4 tsp. paprika, until evenly coated.
2. Line a baking sheet with tinfoil and evenly layer the cauliflower on it, topping with chopped cooked bacon.
3. Bake for 15 minutes, then remove from the oven and top with 1 cup parmesan or cotija cheese, bake 5 minutes more or until it begins to brown on top. Sprinkle with green onion.
