Fettuccine Alfredo

Want a healthier version of this comfort dish? I did, and this is one I love!

Ingredients

1 Cup milk

1/2 cup cottage cheese

1/2 cup parmesan cheese

1 Tbsp. corn starch

3 Tbsp. melted butter

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. garlic powder

1/2 tsp. dried oregano

1/2 tsp. dried parsley

fresh basil to top

8 oz. cooked pasta of choice


Directions

  1. Bring a pot of salted water to boil, prepare noodles until al dente - drain and set aside. While the noodles are boiling, melt the butter, and add to a blender. Also add to the blender the milk, cottage cheese, parmesan cheese, corn starch, salt, pepper, garlic powder, oregano, parsley. Blend all until velvety smooth.

  2. Add blended ingredients to a saucepan and heat through for 15 minutes, stirring occasionally until thickened.

  3. Toss noodles in the sauce to coat, top with freshly cut basil. Serve immediately with blackened chicken and your favorite vegetable
