I purchased some Christmas gifts this morning and it put me in the Christmas spirit. Hence - cookies for Santa recipe! I love a chewy molasses cookie. Sometimes the simple and traditional recipes are the best ones. No bells and whistles here, only sweet simplicity.
Ingredients
2 cups AP flour
1/2 tsp. ground clove
1/2 tso. ground ginger
2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup vegetable oil
1 cup sugar (plus 1/4 cup for rolling)
1/4 cup molasses
1 egg, room temperature
Directions
Mix flour, clove, ginger, baking soda, cinnamon and salt in a bowl. Set aside. In a stand mixer mix the oil and 1 cup sugar until well incorporated, about 2 minutes. Add molasses and mix well, then add the egg until smooth and glossy.
Combine the two mixtures by slowly adding in the dry flour mixture. Wrap the dough tightly in Saran Wrap and place in the fridge for 2 hours. Do not skip this step!
Preheat oven to 375F. Remove dough from the fridge and using a cookie scoop, make 1 inch dough balls, then roll them in sugar. Space 2 inches apart on a double parchment lined (or silicone mat) cookie sheet. Bake for 7 minutes. They will be soft, and will continue to bake and firm up in the next step.
Remove from oven and let sit on the cookie sheet 5 minutes before removing, while they cool you can top with some extra sprinkled sugar. Let cool completely and store in an airtight container or bag. Enjoy with hot tea, cider, or Wassail (recipe coming soon!)
