Why is it so difficult to duplicate recipes from grandma? Because she never wrote them down and always made them with grandma love/magic that I simply don't possess. Grandma Cline didn't write this recipe down, so everything below is guessed measurements, from watching her as she made it. Here's to the dish that makes me feel loved.
Ingredients
3 cups milk
2 tbsp. flour
3 Tbsp. butter
6 oz. Velveeta, cubed
3/4 cup shredded smoked gouda + sharp white cheddar (or cheese of your choice)
8 oz. macaroni - cooked
salt, pepper, onion powder to taste
Directions
Boil Mac in salted water until al dente. While Mac is cooking, make a thin roux with the melted butter and flour (let brown for 2 min) . Add the milk and whisk until thickened slightly. Preheat oven to 350 F.
Cube your Velveeta, shred your cheeses of choice, and add to the roux until melted. Add salt and pepper, onion powder. Lightly grease a 9x9 glass dish and place Mac in it. Pour cheese sauce over the Mac - DO NOT STIR.
Bake uncovered for 30-45 min or until top is brown and bubbly.
