Loaded Broccoli Salad

This isn't your typical broccoli salad - it comes with all the bells and whistles that makes for an amazing side dish!


Ingredients

8 strips bacon, finely chopped (or bacon bits)

2 head broccoli, chopped (or 1 head broccoli and equal parts cauliflower)

1 cup dried cranberries

1 apple, diced

1/3 cup salted sunflower seeds

1 cup finely shredded cheese

1/3 cup diced red onion


Dressing

1 1/4 cup Miracle Whip, or Mayo

1 Tbsp. Lemon juice

zest of 1/2 lemon

2 Tbsp. white wine vinegar

1/4 cup sugar

1/4 tsp. salt

1/4 tsp. pepper

1/4 tsp. ground mustard


Directions

  1. The key to this salad is having the ingredients properly proportioned in size. I hate eating broccoli salad with huge pieces of broccoli that are hard to chew. Make the broccoli smaller than bite size pieces, same with the apple! Finely dice the cheese and red onion as well.

  2. Mix all ingredients in a bowl, set aside. To make the dressing whisk all ingredients together in a bowl. Pour over the salad and mix well. Will store in a sealed container in the fridge for 5 days.
