Brussel sprouts so good your 4 year old will eat them. Need I say more?
1 1/2 - 2 lbs. brussel sprouts
4-6 strips bacon
2 Tbsp. maple syrup
3/4 tsp. salt
1/2 tsp. pepper
reserve bacon grease (if you want healthier, you can use 2 Tbsp. olive oil instead, but I stand by my bacon drippings)
Preheat oven to 400 F, place rack in the center of the oven. Tinfoil a large baking sheet, with sides up so bacon grease doesn't run. Place bacon strip on tinfoil and immediately place in the oven to cook. Remove bacon when it is cooked, RESERVING the bacon grease. Leave it on the tinfoil.
Cut bacon into small, bitesize pieces, set aside. Cut Brussel sprouts in half, length-wise. In a mixing bowl, toss well the sprouts with maple syrup, salt, pepper, and reserved bacon grease (pour onto it from the pan).
Return sprout mixture to tinfoil pan, spreading it into a single layer. Top with chopped bacon. Return pan to the oven, bake for 20-30 min. until the Brussel Sprouts are cooked and have some yummy, caramelized tops.
