Mexican Street Corn Salad

I love this recipe because I grow the main ingredients right in my backyard šŸ˜


Ingredients:

2 tablespoons sour cream

2 tablespoons mayonnaise

2 tablespoons cotija cheese

1 lime, zest and juice

Ā½ teaspoon chili powder

1 clove garlic, minced

4 mini garden salad cucumbers, sliced thin and diced

1 cup fresh garden corn (or frozen corn, thawed or canned if you donā€™t have fresh)

Ā¼ cup cilantro, minced

2 tablespoons minced red onion

Sea salt, to taste.


Directions:

Mix all ingredients and enjoy with fried tacos.
