Cinnamon Apple Muffins

These bad boys are perfect for both breakfast or an after dinner treat. No fluff about it, these taste and smell as good as they look!

Ingredients
2 cups all purpose flour
2 tsp. cinnamon
2 tsp. baking soda
1/4 tsp. salt
2 large eggs, room temp.
1 cup granulated sugar
1 stick butter (8 Tbsp.) melted
1 cup sour cream, room temp.
1 cup diced apples
Turbinado sugar for sprinkling
Directions
Preheat oven to 350 F. Grease and flour a 12 cup muffin tin (or use muffin wrappers). In a mixing bowl whisk together the flour, baking soda, cinnamon, and salt. Set aside.
In a stand mixer beat the eggs until smooth. Mix in the sugar until light and fluffy. Add melted butter and mix. Slowly mix in the flour mixture and sour cream alternately, beginning and ending with the flour. Batter will be slightly stiff.
Divide the batter among the muffin cups, with the batter reaching the top of the rim. Sprinkle the tops generously with Turbinado sugar. Bake for 25 minutes, rotating the pan halfway through the baking time, until the tops are golden brown. Makes 12 muffins.
