Perfectly Chewy Chocolate Chip Cookies

Do you ever wake up and NEED a cookie? That was me today.


1/2 cup unsalted butter, melted

3/4 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 tsp. vanilla extract

1 1/3 c. AP flour

1/2 tsp. baking soda

1/8 tsp. salt

1 c. chocolate chips

flaky sea salt for garnish


  1. In a stand mixer, cream the butter and sugars. Add the egg and vanilla and mix until smooth.

  2. In the same bowl, add the flour, baking soda, and salt. Mix until just combined. Do not overmix!

  3. Use a cookie scoop (1 1/2 Tbsp.) to form dough balls on a prepared cookie sheet. Place in fridge for 20 min. Preheat oven to 350F.

  4. Remove dough from fridge, line a new baking sheet with parchment paper and place dough balls about 2 inches apart. Bake 8-9 minutes or until edges are golden brown. Remove from oven, garnish with flaky salt, and cool at least 5 min. on a cookie rack before eating. They may look a little underbaked - this is okay they will continue to bake a bit as they cool! As long as the edges start to brown, you can pull them from the oven.
