Some days I get up early to work, and by 10:30am I want to eat lunch. THIS is the go-to lunch on those days!
Ingredients
1 lb. ground beef
1 medium onion, diced
packet taco seasoning (or make your own)
4 sweet potatoes, diced
1 Tbsp. olive oil
6 eggs
1 avocado
cherry tomatoes, halved
handful of cilantro, chopped
salt and pepper to taste
Directions
Preheat oven to 375 F. While the oven is heating up, tinfoil a large sheet pan and spray with oil. Peel and dice sweet potatoes in small cubes and toss in a bowl will olive oil. Evenly layer potatoes onto the foiled pan and bake, about 25-30 min. or until potatoes are fork tender.
While the potatoes bake, cook the ground beef and chopped onions in a skillet. Drain, and add taco seasoning until well incorporated. Set aside.
Once the potatoes are cooked, remove them from the oven and create 6 wells in the potatoes, crack an egg into each well. Salt and pepper the eggs and place back in the oven until eggs are cooked to your liking. I like my yolks to run.
Build your bowl! I start with the taco meat, then layer on the sweet potatoes and eggs. Top with tomatoes, avocado, and cilantro!
