Willie Potatoes

Odd name? You betcha. Delicious? So delicious. Named after my dads best friend, and someone I consider to be an honorary dad! These potatoes are hundo-p. I usually make them once a week!


Ingredients

6 medium sized yellow potatoes - cut into thick sticks (russets or reds will work also but I find the yellow are more creamy in texture)

1 Tbsp. Olive oil

salt

pepper

onion powder

garlic powder

dried parsley


Directions

  1. Preheat oven to 375F. Scrub potatoes and cut into thick sticks, almost like a steak fry.

  2. Place potatoes in large mixing bowl and add all other ingredients. Toss until well coated. Be generous with the spices and herbs! I don't measure, just feel the love in the salt, onion, pepper, garlic, and parsley.

  3. Line a large baking sheet with tinfoil and spray with olive cooking oil. Evenly layer the potatoes on the sheet and bake for 30-45 minutes, until the foil side of the potatoes begin to brown. Pierce with a fork to ensure doneness. Timing will vary depending on if they are store bought potatoes or garden potatoes.

  4. Eat them plain or add Lighthouse Ranch on top - my favorite!
